Ingredients
- 3 tablespoons Food Club all-purpose flour
- 2 tablespoons Food Club unsweetened baking cocoa powder
- 1/4 teaspoon Food Club baking powder
- 2 tablespoons Food Club granulated sugar
- 1/4 teaspoon Food Club pumpkin pie spice, plus more for garnish
- 2 tablespoons Food Club canned pumpkin purée
- 4 tablespoons Food Club whole milk, divided
- 1 tablespoon Food Club vegetable oil
- 1 tablespoon Food Club cream cheese, softened
- 1 tablespoon Food Club powdered sugar
- 1/4 teaspoon Food Club vanilla extract
How to Make
- Whisk together flour, cocoa powder, baking powder, sugar, and pumpkin pie spice in a microwave-safe mug until combined.
- Add pumpkin purée, 2 tablespoons of milk, and oil, and stir until smooth.
- Place in microwave and heat on high until cake is set but still moist, about 1–2 minutes.
- Meanwhile, combine cream cheese, powdered sugar, and vanilla extract in a small bowl until smooth.
- Add remaining milk to the frosting as needed until desired consistency is reached. Frosting should be thick but spreadable.
- Let mug cake cool slightly before topping with cream cheese frosting. Garnish with additional pumpkin spice and serve warm.
