Ingredients

  • 3 tablespoons Food Club all-purpose flour
  • 2 tablespoons Food Club unsweetened baking cocoa powder
  • 1/4 teaspoon Food Club baking powder
  • 2 tablespoons Food Club granulated sugar
  • 1/4 teaspoon Food Club pumpkin pie spice, plus more for garnish
  • 2 tablespoons Food Club canned pumpkin purée
  • 4 tablespoons Food Club whole milk, divided
  • 1 tablespoon Food Club vegetable oil
  • 1 tablespoon Food Club cream cheese, softened
  • 1 tablespoon Food Club powdered sugar
  • 1/4 teaspoon Food Club vanilla extract

How to Make

  1. Whisk together flour, cocoa powder, baking powder, sugar, and pumpkin pie spice in a microwave-safe mug until combined.
  2. Add pumpkin purée, 2 tablespoons of milk, and oil, and stir until smooth.
  3. Place in microwave and heat on high until cake is set but still moist, about 1–2 minutes.
  4. Meanwhile, combine cream cheese, powdered sugar, and vanilla extract in a small bowl until smooth.
  5. Add remaining milk to the frosting as needed until desired consistency is reached. Frosting should be thick but spreadable.
  6. Let mug cake cool slightly before topping with cream cheese frosting. Garnish with additional pumpkin spice and serve warm.
