Go Bad or Go Home Egg Cups

Serves: 12 Egg Cups

Ingredients:

  • 2 tbsp. butter
  • 1 1/2 cups chuck wagon corn
  • 3/4 cup shredded colby jack cheese
  • 10 eggs
  • 2 tsp. garlic pepper

How to Make:

  1. With the help of a grown-up, preheat your oven to 350°F and butter a 12-cup muffin tin.
  2. Fill each cup with 2 tablespoonsof chuck wagon corn and 1 tablespoon of cheese.
  3. Time to mix! In a bowl, whisk the eggs together with garlic pepper. Then, pour your mixture over the veggies and cheese, filling 2/3 of each muffin cup.
  4. Bake for15-20 minutes, or until the eggs are golden and puffed up in the center.
  5. Now comes the hard part! Let the egg cups cool a few minutes before taking them out of the tray and tasting. Eat them fresh, or cool completely and refrigerate for a grab-n-go breakfast (or snack!) for school.
